I dreamt I had a baby last night. Her name was Lily, and she was a disturbing shade of suffocated purple. I awoke from the dream still wishing I’d held Lily more and wishing she’d been named something else, something like Imogen. But I crawled out of the warm bed & blearily stumbled into the shower. Our heating doesn’t work properly (read: at all) upstairs so I huddle under the warm water, rotating constantly trying to get 360° warm. I flossed. It hurt. I just started doing it religiously. It’s the New Year and, yes, I started flossing. And drinking more water. And waking and sleeping at the same time each night and day, sort of. After the hot-cold shower and the flossing, I’ve also begun drawing an Elder Futhark rune out of a velvet pouch each morning. I place it in a gold dipped ceramic bowl, read about the rune, and then meditate for ten minutes. It sounds more eccentric than it is, the runes. It’s like daily devotional Russian roulette. I’ve done this every morning for six days now. Pried myself from dreams at the same hour, taken a hot-cold shower, brush, floss, rinse, rune, meditate. For me, this is a monumental accomplishment.

Resolutions, you might call them. I make them all the time, but I don’t see them as such. They’re blueprints, drafts for the edifice that is my life. I imagine my perfect life in 3D, hold it in my hands, fondle it, go inside it, explore its order and it’s secret passage ways (that’s where sexy things and magic things live…). Then I build it, brick by brick. My life lived is my life’s work.

So the thing is, I don’t do New Year’s resolutions per se. This new found routine and discipline is a coincidence. I started December 28th motivated by a desire to best my raging lack of self-discipline. I’ve an entirely unimpressive knack for doing precisely what I want and nothing else at all ever. That means I take pictures, cook, write, and watch Dr. Who while the rest of life crumbles and wheezes, sorely neglected, around me. I’ve no interest in “New Year’s resolutions” similarly to how I have no interest in Valentine’s Day. I’m into living well and loving well most days of the year & I don’t think we need permission or a reason to do either. You can restart your day at midnight & your year in June. I must say, these new habits have been glorious. I love routine, love it. There’s an odd amount of freedom in it.

So have I resolved to floss, drink 8 glasses of water a day, never let the laundry or dishes or housekeeping get ahead of me, meditate daily, practice yoga regularly, volunteer weekly, plan meals ahead, keep a regular bed and waking time, and (deep breath) post at least once a week? Well, yes, sort of. I’m working towards that, more accurately. But it just happens to be the New Year, I swear.

So here’s a diplomatic salad for the New Year whether you’re a zealot on a diet with aerobics videos poised to go (do people still do aerobics?) or whether you, like me, have a bit of a distaste for the January headlines that squawk things like “trim down!”, “shed pounds!” (sounds like fur…gross), or “something, something waist line!!”. This self-proclaimed “not too virtuous” salad is from the new Food52 cookbook that they graciously sent me. I’ve been perusing and garnering inspiration from it for the past month, and this salad in particular has so many of my favorite flavors happening in it. I am a huge fan of fennel & celeriac (the latter of which I think is sorely neglected in the states). I had some celery tops languishing in my fridge so I tossed the leaves in (I think celery leaves make excellent salad material) for more celery action, along with a bit of chopped fennel frond, mint, and parsley. I like it herbaceous.

Being a dyed in the wool home cook, I’ve always had a natural affinity for the recipes of my fellows, and this is a cookbook comprised solely of recipes from people such as you and myself. And they’re good. And this salad, most especially the caramel apple & thyme vinaigrette, is something to have in your fridge at all times to make all those New Year’s resolution salads you’ll be eating satisfy that “baby, it’s cold outside” need for comfort. Comfort in the form of bacon and caramel.

And because I love it (because I would never do a giveaway of something I don’t use myself) I’m giving not one but two copies away. The cookbook includes what the community said about the recipe when they tried it as well as tips and techniques from the community, which is super useful, the benefits of a crowd sourced cookbook. Not-Too-Virtuous Salad with Caramelized Apple Vinaigrette

copied (verbatim) from the Food52 Cookbook Volume 2: Seasonal Recipes

by wanderash / serves 4 to 6

Who: wanderash is a mom, caterer, and writer living in Wilmette, Illinois.
What: A salad that isn't wimpy or chaste, with sultry, thyme-laced caramel apple dressing and a bacony chew.
How: Make the most amazing salad dressing in the world and drizzle it on the salad. 
Why We Love It: For every lardon, there's a crunchy hit of celery foor and a slice of fennel or tart apple. By the time you've emptied your bowl, you're sated and happy and have forgotten the chill of the outside world. The dressing recipe makes much more than you need, but you won't mind. Make more salad, or warm it gently to drizzle over a pork chop, duck breast, or anything else. 

Vinaigrette

1/2 cup apple cider vinegar, or as needed
2 ounces brown sugar
1 Gala apple, peeled, cored, and cut into 1/4 inch dice
1 garlic clove, minced
1 teaspoon fresh thyme leaves
Juice of 1/2 lemon
Salt
1/2 cup olive oil
1/4 cup canola oil

Salad

5 slices thick-cut bacon, cut into 1/4 inch lardons (1/2-inch-long strips) 
4 big handfuls mixed greens (about 6 ounces)
1/4 celery root, peeled and very thinly sliced or cut into matchsticks
1 fennel bulb, trimmed, halved, and very thinly sliced
3/4 cup pecans, toasted
1 tart apple, cored, halved, and thinly sliced

1. To make the dressing: Combine 1/4 cup plus 2 tablespoons of the vinegar and the brown sugar in a small skillet and cook over medium heat. Stir and cook until the mixture turns a dark caramel color and begins to thicken. You will start to see big foamy bubbles on the surface. Add the apples and garlic and cook, stirring occasionally, until the apples are tender, about 5 minutes.

2. Remove from the heat and put i a blender, along with the remaining 2 tablespoons vinegar, the thyme, lemon juice, and a pinch of salt. Whoosh until blended. Then, with the motor running slowly add the oil, blending until the dressing is emulsified. Taste and season with salt and perhaps a splash more vinegar.

3. Meanwhile, make the salad: Cook the lardons in a heavy skillet over medium heat, stirring occasionally, until crisp. Drain on a paper towel. 

4. Combine the lardons and the remaining salad ingredients in a large bowl. Pour 1/4 of the dressing over the salad and toss well. Taste a piece of lettuce and add more dressing if you like. (Reserve the rest  of the dressing for another delicious use.)

  4. This salad looks positively lovely - I have a thing for celery root, particulary when paired with fennel, and the caramelised apple vinaigrette sounds like something I'd probably be tempted to drink right out of the jar. (Not that I actually would, of course.)

    My goal for this year is to de-clutter, in every possible way I can find - my home, my office, my schedule, my inbox, maybe even my brain (a girl can dream, right?).

    1. I definitely did my fair share of finger dipping in the jar. Also good for dipping bread in, I found. Decluttering is there in the back of my mind, patiently waiting it's turn. I love getting rid of stuff. In my perfect world I would own nothing that wasn't either beautiful, meaningful, functional or some combination of the above.

  7. Beautiful salad and photography! My goal for 2013(and beyond) is to "meander with purpose". To have a purpose for this short, lovely life of mine - and be open to the opportunities that are unexpected and not in my plans, is so good for my soul. These may also stretch me, and allow a 'rising to the occasion'.

    For me, this will be a conscious and constant assessment, but worth it!

    1. I love it. I think to meander with purpose is exactly what I imagine when I see my ideal daily ebb & flow. To be productive without being rigid, to have routine yet be spontaneous, and to have a clear idea of my vision, voice, and personal and artistic purpose. It's ever evolving, never fixed. But still, it's important to me to always have a purpose bigger than the mundane, to believe in something & work for it.

Focusing on cooking, writing, and photography has alleviated some of that... but I find so many things interesting it's hard to not scatter myself or try to do too much at the expense of depth. & yes yes yes: to slow down & breath to tone down the nervous energy is the reason for all the rest. It's my great struggle. I'm a stress ball.

  9. My goals for this year, are to take myself less seriously, and enjoy things more, so I have written down, be more loving, more thankful, more open, more friendly, more caring, and more giving. Not a tall order at all... I have a lot of times where everything fits in it's little time slot, and I would just like to go with the flow a little more...

  12. Last year I found myself. Which, I suppose sounds radically removed since I'm in my third decade in this skin. But I don't think that I'd ever asked myself the hard questions about my true self: who I am in the alone moments, when all my guests leave and I'm standing exhausted in front of a sink full of other's dishes. Or even, how I reconcile my private and public personalities in the event of the death of a child. Last year, I pulled things onto my lap and tucked them away in my soul and found my true being, and it was remarkably clarifying.

    Perhaps my tallest order for this next trip around the sun would be to enjoy myself. I'm all I get. I want to like the way I look when my tussled bedhead reaches the bathroom sink: pale, eyes barely looking for light, with a head-full of thin dark hair. I want to feel accomplishment after I exhaust my muscles with exercise - not the self-hatred that typifies my usual efforts. I want to settle into my own voice, and like the sound my contribution makes to the white noise of life. I want to like me.

    My goal is to finish my degree with honours, and overcome my physical and mental blocks to regain the fitness I had when I was enlisted. I'd love to become a better than average cook too, and I wish I could blog and photograph as well as you - something to work towards when I have spare time!

I don't make resolutions since a serious illness a few years ago, but my goals are to simplify and let go, learn to "throw" a few bowls with a potter, enjoy my garden more, get in better shape for my health, and spend more time with my grandson. Some of these relax me, some of them invigorate me, some make me happy, and spending time with my grandson does all of these!!! I love people & animals and volunteer with a no-kill animal sanctuary. I want to train a dog to take to the Veterans Hospitals.

  17. Life goal: I just got a SWEET new Nikon DSLR for Christmas. Which, if you know me, is another way of saying that I'm really interested in starting a food/photography blog very similar to this one. The writing comes naturally. The cooking comes easily. And now, if I have any say in it, the pictures will come too. Aaaand... learning how to make cheese would also make the top of the list.

  21. My goal is to stop my work day at 3pm so I can give my full attention to my kids after I pick them up for school. This doesn't mean I'm going to spoil them or indulge them. I actually really dislike sitting on the floor and "playing". But too many afternoons I've been so distracted by work that I am positively ignoring them and know I will regret that when they're big and grown!

  23. I have been thinking about starting a journal. Also, keep the house clean...blah blah blah it'll never happen, but I do consider it this time of year!
    I would like to add I love cookbooks with stories. I have a book called A Gracious Plenty with stories and recipes. I love it. I also use the "club" or "church" cookbooks that so many people in Arkansas publish as fundraisers. Good old fashioned food from women like my Grammy. :)

  24. I'm jumping in head first with two lofty goals- to perfect Thomas Kellers croissant recipe, and to save enough money for a down payment on a farmhouse. I too have started drinking more water and getting back in to yoga (6am class yesterday kicked my butt!).   27. My mother-in-law has been using celery leaves in her salads for as long as I've known her! I agree that they make excellent salad making material!! And this salad has been added to my must-try-list!

    I feel the same way, not a resolution gal and I think it was just coincidence of the freshness of the new year that makes me want to make things happen (maybe that does make me a resolution gal, but I don't list them out and live and die by them).
    My goal this year is not to waste time. Love, play, work, create, help but don't wish away any moment because I can't wait til {fill in the blank}. Enjoy every moment. 2013: it's in the details.

  29. I, too, am not a big fan of resolutions. But the post-holiday calm is a good time for introspection, and the turn of the year is always a time of looking back and looking forward.

    If I have one goal for the coming year, it is to reach out more to friends; to talk more often and really stay in touch with their lives. I hate talking on the phone (HATE it) so this is a tough one for me, but it' so important. Life is short: I never want to feel like a friend's life slipped by while I wasn't paying attention.

    1. I pretty much refuse to talk on the phone. I hate it too. I'm kind of anti-social. Sometimes it bothers me, but I've kind of just accepted it. I have people over for dinner & such, but I'm just not the sort that keeps a ton of friends. Sometimes I wish very much that I was more of a people person...perhaps some day! But for now I'm what I call a "low maintenance" friend : )

  30. A friend of mine and I just did this, using the word "resolution" to have multiple goals. Here is what I wrote:
    Read more. Serious books. My goal is 100 books this year.
    Exercise at least four times a week for an hour each day.
    Sleep at least 7 1/2 hours every night. I'm a night owl by nature and it's not healthy.
    Organize my life. Every bit of it.
    Learn something new. Perhaps a new language or an instrument.
    Understand makeup. I'm at such a loss when it comes to this.
    Try new foods. There are so many things I've not tried that are basic. Like meatloaf.
    Indulge in things worthwhile and make them special, not just everyday.
    Open my mind to new ideas. About the world. About myself.
    Nourish my well-being. Eat more natural foods. Drink more water.

    1. That is extraordinarily ambitious! If I can have decent dental hygiene & wake up in the morning, I'll be happy. But, I have to admit that I quietly aspire to all of that as well. I think I'd just get overwhelmed and fail if I wrote it all down like that! I still haven't even been able to manage those glasses of water yet lol

  35. I love everyday life. I dread "the holidays" and long for their end, and even so, sometimes feel a little bruised and blue on January 1 and 2. About a week ago my intention for the new year and beyond popped into my head: More beauty. {local milk} may have inspired that phrase; it surely will help manifest it. The beauty of your writing, photography, and food imagination please me every time a new post appears. I am grateful for your life and work.

    1. I needed a holiday from my holiday. As "the cook" it's sort of maddening as it seems the world is lolling around while you're in the eye of the storm! Or maybe that's just me : ) I love the holidays. I'm a Christmas lover because it was always so magical growing up & kind of still is. But as an adult it's a helluva lot of work too! I love it... but I'm always glad when it's over & I can retreat back into my hobbit hole & work! Thank you for the kind words...beauty in all it's strange & wonderful myriad forms is my raison d'être in the end.

  36. I made a list of 52 "resolutions" last year and maybe accomplished 5, so no more lists. However I want to live in the moment, every single moment. Fully, breathing it in, realizing that life is fleeting and abstract and over too quickly. I want to love who I am with and listen to them with my heart. I want to find myself out of the crevice of depression that threatens at every turn. Standing in the warm sunshine of hope.

    I also intend to make this incredible salad and vinaigrette as soon as I purchase the ingredients! I adore your words first and foremost. I am inspired by your photography and food creations.

    1. 52... yikes! I'm certain I could come up with that if I was feeling like being especially punishing to myself. As I've said a million times to those that know me... living in the moment is what gives me more peace than anything...even respite from depression which has come over me more than once in my life. I can handle anything moment by moment... it's time travel that causes stress. Oh. And medication : ) That helps me too! And thank you...I'm very pleased you like my work!

  37. I'm so with you on the focus on goals, little and large, being constantly set. A large one for me is someday owning my own land, with an orchard, and some goats. (Somewhat similar to you last night I dreamed that I had a heard of baby goats, but accidentally fed them some leeks and they died. I don't think leeks are really poisonous to goats but maybe I should look it up.)

I have a distant dream of a cabin... and of magically transforming into the sort of person that can care for living things like plants & animals without killing them or getting supremely frustrated, the sort that loves more than the idea of it. I dream of having a wolfhound that sits by the fire with us in the cabin, of hunting, foraging, and gardening and cooking the spoils. Alas... I'm an effete city dweller... but life is long! I like the farming anxiety dream...I think it means you're serious about this.

    1. I think I'm still figuring out who my "true self" is. It was kind of buried under a pile of empty bottles of gin for a decade. But in the past 8 months I feel like I've been more myself than I have in 10 years. It's great to know what you are because then you know where to go.

But I'm going to follow one line of thought in the drawings I do every day and try not to get distracted by other ideas, and see where that leads me. Usually I seem to flit around all over the place.

I don't really create resolutions, but I am determined to the lesson the anxiety that creeps into me nearly every day as I face the task of finding a new job by April 30. I will use this to be more confident. I will also be thankful for every day with my partner and our perfect pup.

    1. You've seen my work change a good bit then! You and me both. Anxiety is, in my opinion, the worst feeling in the entire world & the number one things I struggle with. I try to focus on the inevitability of success if I just listen to the quiet stillness that lets me know the "next right thing". Even though sometimes that success doesn't look anything like I'd imagined it would. The universe has a way of having even better idea for me than I do. So I try to remember that when I'm scared or stressed.

Ah - lost myself again this morning in your beautiful writing - Beth - I am really hoping I get a novel out of you at some point! :-) Your writing makes me lose myself in dreams and nostalgia and coming-of-age moments. So, what is it I want to do this year? First, finish my Bachelors Degree. I'm also looking to discover ME again - who am I? where do I really want to be? I need to rediscover Ginger and pursue the epiphanys that come to me. I want to do things on purpose - not just skate through the year with whatever comes my way. I'm also planning a trip to South Africa in October and continue to believe in my ultimate dream of living abroad for awhile in Italy (not this year of course - but soon).

I'll do it when I'm old & life has knocked off enough of my corners that I've either gone mad or learned that quiet patience & long suffering necessary for such an endeavor. I've pursued so so many things in my life... I feel like my path developed over the course of 30 years like a polaroid photo...but one that sort of shimmers and fluctuates and changes and seems to move. So jealous of your trip to South Africa...I've had many dear friends from there over the course of my life & never been. But don't get eaten by a shark.

    As an elementary teacher, my life is consumed by school, my students -- it's a wonderful career, but I need to take more time for myself. So that is my goal -- take time -- cook, spend time with my loved ones, be calm and in the present, read a book and be accepting of myself.

  54. I have never been a "resolution" person, but I find myself at the crux of every "new year" thinking about something I want to be better at/do less of/insert platitude. Last year, I decideded to drink less soda. I didn't want to give it up because I do enjoy my Diet Pepsi. But under the guise of being more conscientious about my overall "health," I decided that only having a Diet Pepsi every few days was probably better than drinking one (or more) every day. I've done pretty well sticking to the plan.

    Aside from our family goal of working on emergency preparedness, I've decided that I am going to work on being more fulfilled. I'm happy with most aspects of my life, but I find myself searching for that place of Zen where I feel no anxiety about my station in life.

I'm not a resolution type of person, but I do have an established life goal... to get myself to the point where I wake up every morning looking forward to what I'm going to be working on that day. It's something I haven't done for most of my working career, but I'm trying hard to change that fact. We'll see if 2013 is the year this goal comes to fruition, even if just partially. :)

Celery and its root are the one food in the world that I despise and I realize this is probably a well balanced recipe (ingredient wise). My goal for this year sounds a bit "thing"-oriented, but what I'm really hoping to do is to decorate my place exactly to my own taste--to throw off the excess and objects I don't really have a tie to. I live in Chicago and move apartments nearly every year, so culling and curating my stuff more carefully will allow me (I hope) to furnish each new space in a way that truly makes it feel like home to me.

  62. Drink more water. It's one of my simpler ones, and I already forgo other drinks for water with nearly every meal. But I know that even that isn't enough. I've asked my boyfriend to pick random times to hand me a full glass of water, which I have to finish before I'm allowed to move. He's bright enough to often hand it to me while I'm pinteresting.

I bought myself a water bottle that I find aesthetically pleasing in hopes that it would "inspire me". I have also enlisted my other half in helping me with stuff like water & bed time. "life's goal" that sounds like a huge thing to strive for and totally unattainable. can i chunk it down some? and since i am very much in agreement w/ you in regards to resolutions that word is out also. can we just leave "it" nameless? my goal for just the next month or so is to allow myself the time and space to start to breathe again and i mean really breathe as it has been way too long. to know that it is ok for me not to work every day and not to push every day - that i really will still be ok. not great but ok. that was never allowed for me either from parent's or spouse - but now i need to create a space to do that and frankly i'm terrified. ok too big a step - need to parce it down - though have no idea how so would welcome suggestions w/ regards to that.

    oh and learning it is ok to eat would also be part of that so would love to win the cookbook for inspiration.

    1. haha... by life goal I meant a goal that involves living. So... basically anything! Not a *lifetime* goal. Paring it down it the only way, I think! Breathing is good. I try to do nothing but it for ten minutes a day, at least. It really does help. Did you know that meditation actually has proven neurological benefits? I honestly think that whether you're a just an anxious ball of tension like myself or whether you have trouble eating or are an addict of any kind or just a human being trying to be a better version of yourself... meditation really helps. (I'm preaching, I know. Sorry.)

    I love fennel both raw and roasted. I have not tried the celery root. Is it not the scariest thing? Makes you wonder who looked at it and said, "Boy, I want some of that!".

I want to start making bread on weekends and teaching my children the respect and appreciation for bread's history in civilization, as well as recapture a healthier rhythm of my childhood that I seem to have lost in our daily hectic schedules. I also want to start reversing the accumulation of "stuff" and pare down as much as possible. That is going to be tough, but it's a worthy goal!

I am not a resolution-setting person, but I too am trying to do the "go to bed/get up at the same time every day" thing, I tend to stay up way too late but still have to get up way early....and I know it's not healthy. I am also committed to make more time for spending time with friends instead of "putting it off until I'm not so busy"! My other goal/ is to make more time to play and have fun with my work; it's what feeds creativity and makes what I do joyful - but I just don't take time enough to play.

    I make a salad with fennel, apple, pecans and Meyer lemon that reminds me of yours but I love the differences you have made; I have been curious about celeriac but never tried it...until now! I am going to stop at the market on my way home from the studio and get the ingredients for it tonight. I have a lot of goals, though the one my husband and I are going to focus on most this year is to complete another 8 months of working & travelling in the UK/Europe, then make our way home to New Zealand to be back in time to spend Christmas in a house or tent somewhere by the sea.

  86. I love routine and feel lost without it; but one thing I have a hard time building into my routine is time for myself, or what people might call "spiritual" or "relaxation" time. Yes, I sometimes force myself to sit down and read for pleasure (although rare). But I never meditate and I never do yoga (mind runs afar and I end up feeling anxious afterward). Oddly, this year I feel a particular urgency to start with the meditation and yoga, and you've, in a roundabout way, reinforced those goals. My absolute main goal... is to find a career that suits me better. That makes me feel accomplished at the end of eight hours, and that I don't see as a hindrance to my daily existence. Thank you for sharing your thoughts and your beautiful photos with us!

  88. I go through a laborious process of making my own strained "Greek " yogurt. From what I have read, the strained yogurt is much more digestible, has removed lactose and increased protein. The ritual of working with the farm fresh raw milk through the stages of heating to 110*, jarring up for 10 hours of oven time at 100*, refrigerating for 8 hours , then straining for 8 hours through a brown coffee filter lined coffee funnel finally brings me to putting this white thickness into little 7 oz glass jars I have saved . ( I have a serious glass jar collection for all of my food storage). Two gallons of milk produces > 1 gallon of yogurt.This beautiful, solid, thick "cream" is my daily delight mixed with Eddie's Sale Creek Honey :) My hope for "sooner than later" is to get somewhere with Sandor Katz's books and do some fermentation. Have you done this, Ms Local Milk ? I profess so much about healthy eating and conscious sourcing of my food, it is time i take a step in this new direction of culturing raw food !! :)

I rarely make resolutions, per se, but often I sit down and make some assessments on how life seems to be moving forward and see which areas of it can have a bit more focus, or as it stands, less focus (like on mindless internet surfing vs. doing something practical and necessary). I try to think of a means of viewing the year ahead with more clarity, keeping notes in a notebook for reference and just trying to make worthwhile improvements that I can manage. What I came up with for this year is to spend more time with books, my DSLR camera, explore more outdoor spaces, keep up the body improvements and become a better runner. All acceptable and attainable goals.

  97. My resolution is to have a five-year plan in place early this year. I feel that many people simply respond to life instead of taking the initiative to go after it, but I too struggle with having too many interests and not enough skill in any area.

    That said, my goals just for this year are to raft five new rivers this year that are at least Class IV+, to get a sub-20:00 5k, and to learn to can food. Do you happen to know if canned food tastes any good? That's my biggest worry, especially for home-grown tomatoes and peaches...
